Ingredients
Chicken
- 1¼ lb boneless, skinless chicken breast
- to taste Kinder's Big Bold Chicken Seasoning
- as needed olive oil or cooking spray only enough to prevent sticking
Garlic-Lemon Spinach & Toasted Almonds
- 10-16 oz fresh spinach one large bag
- ¼ cup sliced or shaved almonds
- 1 tbsp extra-virgin olive oil
- 3 cloves garlic minced
- ½ lemon juiced
- ¼ tsp salt then adjust to taste
- ¼ tsp black pepper
- optional red pepper flakes a pinch
Instructions
- Season the chicken Season 1¼ lb boneless, skinless chicken breast generously but reasonably with Kinder's Big Bold Chicken Seasoning. Use only enough olive oil or cooking spray to prevent sticking if needed.
- Grill the chicken Grill the seasoned chicken until cooked through, about 6 to 8 minutes per side depending on thickness, or until the center reaches 165°F. Let it rest briefly, then dice into bite-sized pieces.
- Toast the almonds While the chicken cooks, heat a large dry skillet over medium heat. Add ¼ cup sliced or shaved almonds and toast for 2 to 3 minutes, stirring frequently, until lightly golden and fragrant. Remove them immediately and set them aside; sliced almonds can turn from toasted to burned quickly.
- Start the garlic Add 1 tbsp extra-virgin olive oil to the skillet. Add 3 minced garlic cloves and cook for about 30 seconds, just until fragrant. Do not let the garlic brown.
- Cook the spinach Add 10-16 oz fresh spinach, working in batches if necessary. Toss as it wilts and cook for 2 to 4 minutes, until wilted but still bright green.
- Finish the spinach Remove the skillet from the heat. Add the juice of ½ lemon, ¼ tsp salt, ¼ tsp black pepper, and an optional pinch of red pepper flakes. Toss, then taste before adding more salt because the chicken seasoning may already bring plenty of sodium to the bowl.
- Add the almonds Fold or sprinkle the ¼ cup toasted almonds into the garlic-lemon spinach, keeping some visible toasted almond pieces on top.
- Build the bowls Divide the garlic-lemon spinach and toasted almonds between 3 bowls. Top each bowl directly with about one-third of the diced grilled Big Bold chicken. Do not add another sauce or garnish just for appearance.
