Ingredients

  • 1 large cucumber
  • 1 pint cherry or grape tomatoes
  • ¼ medium red onion
  • ½ lemon juiced
  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar
  • ¼ tsp salt
  • to taste Black pepper
  • optional chopped fresh cilantro to taste

Instructions

  1. Prep the vegetables Cut 1 large cucumber into bite-sized pieces. Halve 1 pint cherry or grape tomatoes. Thinly slice ¼ medium red onion.
  2. Dress the salad Combine the cucumber, tomatoes and red onion. Add the juice of ½ lemon, 1 tbsp olive oil, 1 tbsp red wine vinegar, ¼ tsp salt, and black pepper to taste. Add chopped fresh cilantro to taste if desired.
  3. Toss and rest Toss everything together until evenly coated. Let the salad sit for approximately 10 minutes before serving. The cucumber and tomatoes will release some liquid as they sit and combine with the lemon, vinegar and olive oil to create the dressing. Toss once more before serving.
